Ingredients:
- 2 pounds new potatoes, quartered
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh chives
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons white wine vinegar
- Salt and black pepper to taste
Instructions:
Place the cut new potatoes in a large pot of salted water and boil them for 10 to 12 minutes, or until they are soft but not mushy
After cooking the potatoes, drain them and let them cool flat
Cut up the fresh parsley, dill, and chives and put them in a bowl
Whisk the Dijon mustard, white wine vinegar, and mayonnaise together in a different bowl until they are well mixed
Add the cooled potatoes slowly to the herb mix
Add the dressing to the potatoes and herbs, and then toss the potatoes so that they are well covered
To taste, add salt and black pepper to the potato salad
Put the potato salad in the fridge for at least an hour before you serve it so that the flavors can mix
Serve cold, and if you want, add more fresh herbs on top
