A fresh and colorful corn salad that's perfect for summer picnics. Packed with sweet corn, juicy tomatoes, and crisp veggies, this salad is bursting with flavor.
Ingredients:
- 4 ears of fresh corn, kernels removed
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/2 cup cucumber, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions:
Toss the cherry tomatoes, red onion, red bell pepper, and cucumber with the fresh corn kernels in a large bowl
Take a small bowl and mix the olive oil and lime juice with a whisk
This will make the dressing
Add pepper and salt to taste
Add the dressing to the salad and mix it all together
Mix the chopped basil and cilantro into the salad one more time
Crumble some feta cheese on top of the salad
Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
Serve as a cool side dish at your summer picnic
