Quick'n'Healthy: Roasted Taro and Quinoa Salad



Roasted Taro and Quinoa Salad is a tasty and healthy dish that combines the earthy flavors of taro with the protein-rich goodness of quinoa. This salad is easy to make and full of fresh vegetables. It's the perfect mix of tastes and textures.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups taro, peeled and diced
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

Get the oven ready by heating it up to 400F 200C

Put quinoa and 2 cups of water in a pot

Slowly raise the heat, cover, and let it cook for 15 minutes, or until the quinoa is done and the water is absorbed

Use a fork to fluff it up, then let it cool down

Toss diced taro with salt, pepper, and 1 tablespoon of olive oil on a baking sheet

For 20 to 25 minutes, or until golden and soft, roast in an oven that has already been heated

Let it cool down

Toast the taro and add it to a large bowl along with chopped red bell pepper, cherry tomatoes, red onion, and fresh parsley

Mix the last tablespoon of olive oil, the balsamic vinegar, salt, and pepper in a small bowl with a whisk

Pour the dressing over the salad and gently toss to mix

Serve right away or put in the fridge for a cool salad that tastes great

Many people follow a keto, paleo, low-carb, or gluten-free diet. This easy freezer bag ice cream recipe is great for them. Without an ice cream maker, it's a simple way to get ice cream when you want it.

Ingredients:

  • 2 cups heavy cream
  • 1/2 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk
  • Ice
  • 1/2 cup salt rock salt or kosher salt

Instructions:

In a small bowl, mix together the powdered erythritol, vanilla extract, and salt

In a quart-sized freezer bag, pour in the heavy cream and almond milk

Add the erythritol mixture into the bag with the cream and seal tightly

In a gallon-sized freezer bag, fill halfway with ice and add the salt

Place the sealed quart-sized bag into the gallon-sized bag with the ice and salt

Seal the gallon-sized bag tightly

Shake the bag vigorously for 5-10 minutes until the mixture thickens and becomes ice cream consistency

Remove the quart-sized bag from the ice, wipe off any salt from the bag, then open carefully

Scoop the ice cream into bowls and enjoy immediately, or store in the freezer for firmer ice cream

Ingredients:

  • 5 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup grated cheddar cheese
  • 1/4 cup finely chopped onions
  • 1/4 cup ketchup
  • 2 cloves minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 30 slider buns

Instructions:
